I have several recipes to post but will only post one today. 11/20/2008
Cream Cheese Balls
3 8oz Philly cream cheese (room temp)
1 tsp Accent (I use red pepper, gives it just a little kick)
1 tsp Woreshire sauce (or Tabasco)
5 oz dried beef (finely chopped)
1 pkg roast beef (about 5 oz) finely chopped
1 bunch green onions, finely chopped
Dill Weed (to roll cheese balls in)
Mix all ingredients except dill weed. Shape into 6 balls and roll in dill weed. Store in refridgrator covered with parchment paper or waxed paper. Serve with crackers of you choice.
Another recipe that makes a hit at any event!
Crawfish Cornbread
2 cups yellow cornmeal (self rising)
1 teaspoon salt
2 teaspoons Baking Powder
6 Eggs
2 large Onions (chopped)
1 lb Chedder Cheese (grated)
2/3 cup veg. oil
2 cans Cream Corn
2 lbs Crawfish Tails (frozen)
1/4 cup Jalepeno Peppers (chopped)
In bowl combine Cornmeal, Salt & Baking Powder.
In another large bowl beat eggs then add chopped Onions, Peppers, Cheese, Veg. Oil, Corn & Crawfish. Stir until mixed well.
Combine both bowls into one.
Pour mixture into greased 12x14 baking dish.
Bake at 375 for about 55 minutes, or until golden brown. Sides should pull away like a cake would.
